Peach & Strawberry Dump cake/dessert

Dump means to dump all together in one dish!

Ingredients 1/2 cup (113g) unsalted butter 1 1/2 cups granulated sugar (divide and keep 1/2 cup away) 2 cups all-purpose flour 1 1/2 tsp baking powder 1/2 tsp salt 1 cup full cream milk 1 tsp vanilla extract 1 (29-ounce) can sliced peaches in syrup

Fresh strawberries 1 tsp ground cinnamon 1/4 tsp ground nutmeg

Method Preheat oven to 350°F/175°C. Butter a 22" Spring foam baking dish. Keep aside. Place butter in a medium-size microwave-safe mixing bowl. Heat butter in the microwave until melted. To this Add 1 cup sugar, flour, baking powder, salt, and whisk to combine. Add milk and vanilla, whisk until combined. Pour batter into prepared baking dish.



Wash and drain strawberries and take the stems off and cut each into 4.

Open the tin of peaches and pour the syrup into another container and spoon peaches over top of the batter, placing them evenly around the pan. Place the strawberries in between.

Add 1/2 cup sugar, cinnamon, and nutmeg to the syrup. Whisk to combine. Pour juice over peaches and strawberries.

Bake 55-60 minutes until golden brown. I covered the cake with a piece of aluminium towards the end as the top was getting burnt.





NB: Since I only used one tin of Peaches and the quantity was not enough I added the fresh strawberries. To the syrup I added about an inch of apple juice.


Remember, if you don't have all the ingredients just use what you have at home - you can always improvise!! I had no cinnamon powder, I just took a cinnamon stick and used a grinder.


This tastes better with a scoop of ice cream on top if desired.
