Pineapple Cake


Ingredients

250 gm flour

2 ½ tsp baking powder

5 eggs

250 gm sugar

250 gm butter

Vanilla

Milk a little

Either use 250 gm fresh pineapple,

cook with a bit of sugar(50gms), there should be a little bit of juice/syrup left when you cook.


Or take a tin of Pineapple pieces and drain the juice keeping a bit


Method

Pre-heat oven to 180°C. butter and line a square cake tin.

Cream together butter and sugar. Then add an egg at a time and beat then mix in the flour and the pineapple plus juice/syrup. Add a little milk to get a dropping consistency.


Bake for 40 minutes. Turn onto a cooling tray and when cooled you could decorate as you wish.


For the icing

you could make a butter cream icing If you wish you could add a few drops of pineapple essence and then add pieces of pineapple from a tin cut into small cubes.


NB: This cannot be kept for long as the pineapple gets rancid after around 4 days.
