Ingredients
1 pineapple
a handful curry leaves
1 onion
2 pips garlic
2 green chilies
a few mustard seeds
a few cumin seeds
1/2 tsp turmeric
1/2 tsp pepper powder
1/2 tsp Salt
1/2 tsp sugar
1/2 tsp chili powder
2 Tbsp Ghee
Method
Cut the skin off the pine apple, take off the eyes and then cut strips lengthwise and then into pieces. Slice the onion, crush the garlic, slice the green chilies, wash and drain the curry leaves.
In a saucepan put ghee and add the mustard and cumin seed till they splutter. Then add in the curry leaves, green chili and garlic stir nicely and add in the pineapple, turmeric, pepper, salt, sugar and fry together. Close with lid and cook on medium heat. Crush a few pineapple pieces so that the juice comes out into the gravy. Then add in the coconut milk and cook further. Lastly add the chili powder on top and simmer till thick.
Fried in Ghee Still Cooking Kept to simmer
