Pineapple pudding


Ingredients

1 1/2 cups milk

3/4 cup sweetened condensed milk

3/4 Cup diced pineapple tin (if fresh put a little sugar)

1/4 cup agar agar or three sheets gelatine

1 tsp vanilla

 

For the topping

1/4 cup Grated coconut

8-10 cashew nuts

1  tablespoon ghee or butter

2 tablespoons sugar

 

Method

Add the gelatine sheets in cold water enough to cover them and let them soak for 5 mts.

Boil the pineapple without overlooking, Take off from stove.


In a pan put milk, condensed milk and vanilla and bring to a boil, lower the fire and then squeeze the gelatine sheets for excess water and add to pan (add the drained Agar, agar) and cook again till slightly thick. Take off fire and put in pineapples. Put in fridge to set.



For topping you could roast coconut till brown add cashew nuts, then add butter and sugar till it smells nicely, put all into a grinder, grind to a powder, once dessert is set sprinkle on top -

I didn't do the topping this time as most kids don't like coconut roasted!!
