Ingredients
Sandwich bread without crusts
butter
beetroot
carrot
cucumber
cream cheese
pepper
salt
pinch sugar
mustard paste
Method
Boil the beetroot and but in blender and mash, add a little mustard paste to this and keep aside.
Slightly boil the carrot and blend, then add pepper and salt and a pinch of sugar to this and keep aside.
Peel the cucumber and grate it and then keep in a strainer for the juice to drain out. Mix a bit of cream cheese to this.
Slice the sandwich bread length wise and rub butter and as shown below rub some carrot then in then middle beetroot and at the end the cucumber. Then roll the sandwich and wrap in cling foil and keep in fridge. You will have a few rolls like this. Next day take the rolls out and slice it to form a pinwheel.
NB. Remember to always cover your sandwiches with cling film if not it will dry out.
