Ingredients
2 cups all-purpose flour
2 cups fresh grated coconut
1 tsp baking powder
Salt to taste
A little water
needed
a chopping boards
a rolling pin
extra flour for dusting
and either a circular cutter or bowl used up side down
Method
Add the flour into a bowl, add the coconut, baking powder, salt and water to bind together, do not put too much water as it will get sticky, just enough to bind. Either bring together by hand or in a cake mixer with dough hooks.
Then make a big ball, cut into 8 balls and roll out each on a board sprinkled with a bit of flour.
Warm a pan on the fire without oil and put in each roti and when one side is done turn over to the other side. If you want to make equal shapes either use a cutter or a bowl turned upside down..
This can be eaten with an onion sambal, jam, butter and any curry you wish
Ps: Do not worry if it gets a bit sticky just add a bit more flour and keep mixing.
