Pomegranate Meringue Dessert


Ingredients

Double cream

Packet of meringues or you can make your own

2 big pomegranates



Method

Whip the cream till it holds its shape. Break in the meringue ( do not powder but pieces) and drop in the pomegranate seeds (cut them in half and hit the back with a wooden spoon – the seeds fall out – wear an apron as the juice squirts all over!!) squeeze in some of the juice. Mix carefully with a spatula.


Dish out on to a flat oval or square dish. Then take a half pomegranate and hit out the seeds and then crush a meringue till it powders over it.


note: This same recipe can be done with strawberries
