Roast Chicken

Ingredients 2 full chicken 1 Lemon juice squeezed Soya sauce about ¼ cup 2 tbsp Mustard paste with seeds (Ancienne make French) or home made mustard paste 2 tbsp Chicken powder 1 tsp Paprika 1 tsp Turmeric 1 tsp each Garlic and Ginger powder

salt and pepper

1 bottle small white wine (optional)

or hot water


Method Wash chicken and rub salt pepper. Take a bowl and add the lemon juice, soya sauce, mustard paste, chicken powder, paprika, turmeric and ginger and garlic powder, mix well and then pour marinade on to the chicken. You can marinate up to an hour if you wish.


Warm oven to 200°C and then put slices of butter on chicken and cook in oven for 15 minutes. Then add white wine Or enough to cover 1.5 inches inside the pan and cook for an hour, turn chicken every 20 Minutes. You can add citronella too and whole garlic cloves Put a small bottle of white wine You can add a bit of hot water too - if not enough gravy.
