Ingredients
3 cups flour
2 ½ cups coconut milk
1 tsp salt
1 tsp turmeric powder
2 tbsp Oil
2 eggs
1 ½ cups water or as required
For the vegetable mix
½ onion
20 Curry leaves
3 Cloves Garlic
1 tsp crushed Ginger
5 Green chillies
1 tsp Mustard seed
1 tbsp Cumin seed
½ Tbsp Chili pieces
2 tbsp Oil
Method
Take a fry pan and add the oil, into this add the mustard seed and cumin seed, after this is fried add in the sliced onion, finely cut chili, chopped garlic, crushed ginger, curry leaves. After this is fried nicely off the heat and add in the chili pieces. Keep aside to cool down.
Take a bowl add the flour, salt and turmeric. Stir with hand whisk, then add in gradually the coconut milk till you get a thick batter, add in the eggs and oil. After mixing well put in a little water at a time till you get a smooth batter. Then strain into another bowl. Now the mix is ready for the addition of the vegetable fry. Add the fried mix and mix nicely. Now the batter is ready to make your pancakes.
Take a fry pan and rub a little oil, keep heat on medium and when the pan is hot pour in the batter and turn the pan till the pancake has taken shape. After a few seconds flip over and cook the other side. Now put onto a plate. Keep making the pancakes till batter is all used up.
NB: If you use a big fry pan you can make around 12 but if the pan is smaller you can make 24.
You could also use a cake mixer for this or hand/Bar mix.
