Semolina or Uppuma

Ingredients

2 cups Semolina

1 tsp Mustard seeds

1 tsp Cumin seeds

1 tsp urud dhal and ½ tsp Channa dhal – (optional)

½ onion

1 inch piece Ginger

2 Green chilies

A sprig of Curry leaves

Around 8 Cadju pieces

A handful of Green peas

1 Carrot

1 small Leek

Ghee and Vegetable Oil


2 3/4 cup water( for a drier semolina)

1 tsp Salt (to taste)

2 tsp ghee

and a little lemon juice

 

Method

Take a dry pan and add the semolina and roast on low heat, do not let the colour change. Keep this aside, till needed.

In a wok add a spoon of Ghee and a spoon of oil and keep on medium flame. Now add the mustard seed and cumin seeds, when spitting add the curry leaves and cadju, then add the green chili, ginger crushed, vegetables of your choice cut fine, you can also add the chopped onion. Add around 2 3/4 cup water, bring to a boil, now add the Semolina in a steady stream stirring all the while. lower heat and add salt to taste, drizzle the Ghee and add the lemon juice. Break up any big lumps. Now your semolina is ready.


NB: Semolina can be eaten with any Curry, Chutney and Sambal.
