Ingredients
3 3/4 cups white granulated sugar
1 1/2 cups light corn syrup
1 cup water
1 Tsp Vanilla extract- make sure that you use a non coloured extract or it will tint the finished product
blue food colouring I used about 10 drops of McCormick food colouring
needed
Sugar Thermometer
ice Cubes for ice bath

Method
Put the sugar, light corn syrup and water in a pan, let it boil on medium heat without stirring till it reaches 270°F on your sugar thermometer, then drop a bit into an ice bath and when it reaches strands of sugar 285°F, take off fire as this is the "soft crack" stage, add the vanilla and colouring and pour onto a greased tray and keep to set. Once set take a hammer and crack into pieces. Store in an airtight container till needed. (It is really a sugar candy)
