Recipe given to me by my niece Hemanthi Dassanayake
Ingredients
2 cups Jasmine Rice
2 tbsp. oil/ butter
¼ cup fresh onions chopped fine
1 clove fresh garlic chopped fine
225 g /1 cup of spinach
25 g / ½ cup whole Cilantro
1 cup Chicken broth
2 cups Coconut Milk or Full Cream Milk (works well)
Salt to taste
Method
Blend spinach, cilantro and chicken broth in a blender till spinach is well blended.
Add the milk and salt to taste and blend again. Keep aside.
Wash rice and keep to strain. In a medium pan heat the oil/butter over medium heat and add the rice fry till brown and then add the garlic and onion. Cook for around 2 minutes, then add the spinach mixture and stir. Cover and bring to a boil, then reduce heat to low and cook for around 20 minutes or until all the liquid has evaporated.
Remove from the heat and let rest for a few minutes and fluff with a fork before serving.
NB: can be eaten with tomato/onion Sambal - fried fish - devilled beef or.....
