Ingredients
4 large Eggs
1 cup Granulated Sugar
1 cup all-purpose Flour
1 tsp Baking Powder
1/4 tsp Salt
1 tsp Vanilla extract
few drops of Red food Colouring
Method
Preheat oven to 175°C. Grease and line a 20cm round springform cake pan.
Sift together the flour, baking powder and salt. Sift thrice as this will help make the cake light.
Into your electric mixer bowl add the eggs (each broken into a separate bowl before adding it to the mixer bowl) Add the sugar and beat on high for around 7-8 minutes until the mixture becomes pale and holds a ribbon shape when you lift the beaters. Gently fold in the sifted dry ingredients into the egg and sugar mix. Use a spatula. Do not to overmix. Fold gently until the dry ingredients are incorporated. Then add the vanilla mix it into the batter.
Pour the batter into the prepared cake pan. I first poured in the plain batter and then I coloured the remaining batter with a few drops of red gel food colouring and poured it gently on top of the plain layer.
Bake for about 30 minutes until the cake is golden brown and a cake tester inserted into the centre comes out clean.
Once the cake is baked remove from the oven and let it cool in the pan for about 10 minutes. Then loosen the cake and turn out onto a wire rack to cool completely.
