Ingredients
500g Strawberries
5 passion fruits
90 gm of Gelling Sugar-this contains pectin
100 gm Castor sugar
2 sterilised jars
Method
Wash Strawberries and cut the top leaf off and put into a pan, take the pulp out of the passion fruits and put them along with the strawberries in the pan (l put them into a blender and strained away the black seeds only took the juice - you don't have to do this if you like to eat the seeds!!) Add the castor sugar and half of the gelling sugar and bring to the boil for around 2 minutes, then add the balance gelling sugar and stir for a few minutes. Take off scum if any and pour into sterilised jars and close tight. Can be kept for 6 months. Once opened refrigerate and consume rapidly.
