Strawberry Dessert with Cream & Sponge Fingers

This made 12 square portions


Ingredients

Step 1

300 g Sponge Fingers

150 ml milk

Step 2

500 ml whipping cream

100 g icing sugar

300 g strawberries

Step 3

200 g strawberries

100 g sugar

20 g corn flour


Method

Wash and hull the strawberries and weigh them into 2 bowls.

Put the milk in a bowl and put the sponge fingers soak each and place in a Pyrex dish. Depending on the size of the dish cut the sponge fingers into half if needed. ( I only used

110 g of the sponge fingers for my Pyrex dish)

Cut 300 g Strawberries into cubes. Beat the cream with an electric mixer add in the icing sugar and when slightly thick add in the strawberries and fold in. Now pour this on top of the sponge fingers and keep in the fridge to set a bit around 30 mts.

Take a blender and add the balance 200 g strawberries and blend till pureed.

Puree in Saucepan

Then put in a saucepan and add in the sugar and Corn flour. Keep on medium heat and stir till thickened.

Now take the dessert and pour the strawberry puree carefully on top of your cream and keep in fridge to set.
