This recipe was from Betty Bossi, https://www.bettybossi.ch/ one of the best known brands in Switzerland. (gadgets and recipes) My favourite!! You will notice that most of my gadgets are from Betty Bossi!!
Ingredients
1 kg Strawberries
I used Dr. Oetker Gelfix 2:1 mix instead of the the lemon juice - (2 tbsp Lemon juice)
500g Castor sugar -(instead of gelling sugar)
3 Sterilized bottles - (Pour boiling water into bottles)
Method
Wash the bottles pour boiling water into bottles and caps, wear oven gloves and throw out water and cover with lids, and keep aside till needed.
Cut the strawberries in slices and put in the pan, add the lemon juice (I used the Gelfix mix instead of lemon) and half the sugar, brig to a boil stirring, bring to a roaring boil for 2 minutes.

roaring boil add balance sugar remove scum/foam
Then add the rest of the sugar and stir and bring to a boil. cook for around 2 minutes. Remove the foam that rises and discard.

Add the jam whilst still warm into sterilised jars, cover and leave to cool.
I covered the bottles with wax/baking paper and stored them in the fridge when cool.
The original recipe was
1 kg strawberries, 2 tbsp Lemon juice and 500g gelling sugar.
