Strawberry Puree Recipe

Ingredients

1 kg Fresh Strawberries Or any fruit of your choice

1/4 cup Granulated Sugar

Method

Wash and drain the fruits. Put the fruit into a pan and cook the berries with sugar (optional) over a low heat until fruit breaks down (approx. 30 minutes) Add water only if the fruit seems dry and starting to stick to the bottom of the pan.

Puree with a stick hand blender or in a food processor or regular blender when a bit cool.

NB: Store the puree in a clean airtight container in the refrigerator for up to 1 week or

freeze for longer storage (up to 6 months)

NB: Fresh Berries may require a few tablespoons of water to help the cooking

process.

Frozen berries do not, since the thawing will create excess water.

Sugar is not a must and should be added based on the fruit being used and your personal likes.

NB: I made my puree with more liquid as I needed it to cover a dessert. You should keep it a bit more on the heat so that it absorbs the liquid.
