
Ingredients
2 cups strawberries
1/3 cup strawberry jam
1/4 cup water
1/2 tsp balsamic vinegar/lemon juice
1/2 cup heavy whipping cream
1 cup mascarpone cheese
1/2 cup icing sugar
1/2 tsp vanilla extract
21 Lady fingers or Sponge fingers
Method
Wash the strawberries, drain then take off the stalk and cut into two or slice them and keep aside till needed.

In a medium bowl, combine mascarpone cheese, cream, sugar, and vanilla extract. Beat with an electric mixer on medium-high speed for 1 1/2 minutes until smooth and thickened.

In a small bowl, combine strawberry jam, water and balsamic vinegar. Stir with a fork until combined. Dip the lady fingers in the mixture, turn them over to coat them. Line the lady fingers in a single layer, at the bottom of a pan or baking dish.
Spread half of the mascarpone mixture over the ladyfingers and layer with half of the cut/sliced strawberries.
Repeat with the remaining lady fingers, (remember to place the fingers in the same direction as the bottom layer) mascarpone mixture, and cut/sliced strawberries.
Cover with cling wrap and chill at least 8 hours or overnight.
