Stuffed Pancakes

This was made by Dewaki Nugawela when we visited once.


Ingredients

for the pancake

2 Eggs

flour

milk

1 tsp sugar

1 tsp salt

1 tbsp oil


for the filling

1 tin fish

2 green chili

1 small onion


Method

I put some milk into a jug, then added flour - I mixed it till it was slightly thick - I did not measure the flour or the milk. Then I added the oil, salt and sugar, after mixing well till there were no lumps I added the two eggs and beat it a little more. Keep it for around 10 minutes


Till then put the fish into a dish, chop the green chili fine and cut the onion into small pieces. Mix all together. Since this was a tin fish already containing olive oil I did not season it. You could add salt/pepper/chili powder if you wish.



Then take a pancake pan and rub oil or spray cooking oil and put a little bit of batter and turn the pan. Add slightly more batter to get a thicker pancake than normal. Cover with the lid of the pan for a few seconds and then add the filling in the centre and fold one side over the filling and then fold the other side. Then slowly turn over onto the other side and cook till golden brown.



you could eat this with either a salad or any sides of your liking.


Since it is easy to make and someone tells you they are coming over - consider making this.

you could also use a smaller fry pan and make small pancakes  (With any filling of your choice) and make stuffed squares by folding all sides.


NB: you could also add grated cheese on top of the fish if you wish.
