Ingredients
2 boneless skinless chicken breasts
salt and pepper to taste
3/4 cups corn starch
1 eggs beaten
1/2 cup granulated sugar
4 Tbsp cup ketchup
1/2 cup white vinegar/apple cider vinegar
1/2 tsp soy sauce
1/2 tsp garlic powder
1/2 tsp salt
4 Tbsp Vegetable oil
Salt and Pepper to taste
Method
Preheat oven to 325°.
Cut chicken breasts into bite-sized pieces, season with salt and pepper.
In a bowl, add the corn starch and slightly beaten egg. Add chicken into the mixture and coat.
Heat the oil in a fry pan over medium-high heat and cook chicken until browned on both sides. Then place the chicken in a greased baking dish.
In a another bowl mix together the sugar, ketchup, vinegar, soy sauce, garlic powder and salt. Pour this mixture over the chicken and bake for around hour. Keep basting the chicken at 15 minutes intervals with it sauces so that the chicken all gets coated. The sauce gets nice and thick.
NB: You could sprinkle roasted sesame seeds and chopped parsley for decoration - eat with warm Basmati rice.
