Sweet Hawaiian Chicken

Ingredients

1 kg boneless, skinless chicken breasts/legs/thighs

1 can (500ml) pineapple chunks

1 red bell pepper

1 yellow bell pepper

1 cup barbecue sauce

1/2 cup soy sauce

1/4 cup brown sugar

1 tbsp ginger 

2 cloves garlic

1/4 cup corn-starch

1/4 cup cold water

coriander leaves for decoration

 

can be served with

Cooked rice, Chopped green onions, Sesame seeds


Method

Wash and drain the legs/thighs (chicken breasts could be used too). Then place the chicken breasts/thighs/legs in the bottom of your crockpot ( you could use a normal saucepan if you do not have one) but make sure it is deep enough to at least turn the chicken over once.!

Dice the bell peppers and the drained pineapple chunks. Save the juice for later. Grate the ginger and mince the garlic.



Now add the pineapple chunks, red bell pepper, and yellow bell pepper on top of the chicken.

 

In a medium bowl, whisk together the reserved pineapple juice, barbecue sauce, soy sauce, brown sugar, grated ginger and minced garlic until well combined. Pour the sauce mixture over the chicken and vegetables in the pot.


Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is fully cooked and tender. Although I could on high for 3 hours the chicken was done in almost 2 hours. So keep a look out on your chicken!! Please use a deeper saucepan as mine was not deep enough to turn over the chicken at least once.

Once the chicken is cooked, remove it from the crockpot and shred it using two forks. Return the shredded chicken to the crockpot or you can keep as is and mix in the cornflour till thick and decorate with coriander leaves.


In a small bowl, mix the corn-starch and cold water until smooth. Add this mixture to the crockpot to thicken the sauce.

 


Stir everything together and cook on high for an additional 15-20 minutes, until the sauce has thickened.

 

Serve the sweet Hawaiian chicken over cooked rice, garnished with chopped green onions and sesame seeds.



NB: If you are allergic to pineapple you can add any other fruit in syrup to make this chicken.

I also added a little bit of apple juice since the liquid was not enough.
