Lets make Fried Rice

Use what ever ingredients you have!!


This recipe has been tried and tested.


Mixed Fried Rice


Ingredients

Around 3 cups cooked White rice (I used Basmati rice)

3 Tbsp. light soya sauce

1 tsp natural rice vinegar/ or ½ tsp cider vinegar

1 tsp sugar

½ tsp sesame oil (optional)

2 Eggs

225 g - Either shrimps or boneless skinless chicken or ham cubes

1 1/2 cups Mixed vegetables or peas

3 Tbsp. Vegetable oil

2 green onion leaves chopped


Method

Cook rice and spread out to cool on a baking sheet, or refrigerate till ready to use.


Stir together soya sauce, vinegar, sugar and sesame oil in a small bowl and stir till sugar is dissolved.


Crack eggs into another bowl and beat lightly and keep aside.

Cut either chicken/Prawns/ham into small pieces so that it cooks quickly.


Get all ingredients together before cooking.


Take a wok or skillet and over medium heat warm the oil and pour in the cooked rice and cook for around 3 minutes without stirring it.


Then turn the rice over and move it to the side of the pan. Then add the prawns/chicken/ham and any frozen vegetables. Cook for around 3 minutes.


Move to a side in the pan, then put in the egg and stir until scrambled. Lastly pour in the soy sauce mix and green onion and stir everything together till sauce is absorbed. (as you can see I did not have any green onions!!)



I served this rice with Teriyaki Chicken.
