Inspiration on seeing my niece Hemanthi Nicholas's Dessert!!
Ingredients
1/3 cup Cherry Jam/Strawberry jam or Cherry compote (Juice only)
1/4 cup water
1/2 tsp lemon juice
1/2 cup heavy whipping cream
1 cup/240g mascarpone cheese
1/2 cup icing sugar
1/2 tsp vanilla extract
2 cups sliced strawberries
1 cup cherries cut in half
24 lady finger biscuits
Method
In a bowl of an electric mixer, combine mascarpone cheese, cream, icing sugar, and vanilla extract and beat on medium-high speed for 1 to 1 1/2 minutes until smooth and thickened.
In another bowl, combine strawberry preserves/Jam, water, and lime juice. I used 1/3 cup juice of the cherry compote, and used strawberry syrup with water to make 1/4 cup and added to the cherry compote. I then mixed it with a spoon until combined. Then dip the ladyfingers in the mixture to coat them.
Take a Pyrex dish 8"x8" or any other pan and arrange the soaked ladyfingers in a single layer, Then spread half of the mascarpone mixture over the ladyfingers and layer with half of the sliced strawberries and cherries.
Repeat with the remaining ladyfingers, mascarpone mixture, and sliced strawberries and cherries.
Cover with cling wrap and chill overnight.
