Tomato Curry (Ambula)

Ingredients

5 ripe tomatoes

2 onions

2 pips garlic

Handful of curry leaves

1 sprig pandan leaves

2 green chili

2 cloves and 2 cardamom

1 inch cinnamon

A little coconut oil

2 tsp curry powder

1 ½ tsp red chili powder

1 tsp pepper

1 tsp salt

½ tsp turmeric

1 tsp mustard seeds

a cup of water

sugar (Optional)

 

method

Put some oil into a  pan, then add the mustard seeds and let them splutter, then add in the chopped garlic, slice onions, chopped green chili, curry leaves, Pandan leaves and fry nicely. Then add in the cloves, cardamoms and cinnamon. then add in the washed tomatoes.

 

Stir nicely and then add in the curry powder, red chili powder, pepper, turmeric and keep stirring, add in the water and cover and cook for 10 minutes. Once the tomatoes have broken down and the gravy is thick, add the sugar and salt according to taste. If the tomatoes are not too ripe or you want more gravy you can add a little water.
