makes about 3/4 of a litre of ice cream:
Ingredients 1 vanilla bean 4 egg yolks 90 g sugar 30 cl milk 20 cl liquid cream Method Whisk the egg yolks with the sugar. The preparation should coat the spoon. If not, put back a few minutes on low heat while stirring.
In a saucepan, put the milk, the liquid cream, and the vanilla pod split in half and scraped (with the tip of a knife). Heat to the limit of boiling. Leave to infuse for 10 minutes and remove the vanilla pod. Pour the mixture over the yolks. Mix. Keep to cool before putting it in the Ice cream mixer bucket.
