Vegetable Hamburgers


Ingredients

60 g rolled oats (1/3  cup)

50 g shelled nuts (walnuts, hazelnuts, almonds)

40 g wheat germ (1/3 cup)

1 zucchini

2 Onions

2 Carrots

1 Tomato

1 clove garlic

50 g bread crumbs (1 cup)

110 ml Vegetable broth (take a vegetable stock cube) (½ cup)

2 tbsp whole flour

1 tsp parsley, thyme, oregano

Sea salt

Chilli flakes

Chilli powder

Pepper if you like it a bit strong

  

Method

Soak the oats and wheat germ for 30 minutes in the broth. Chop the vegetables and grind the nuts.

Combine all ingredients, mix well and shape as hamburger on a lined backing sheet (if not it catches to the tray) bake at 220˚ for 25 minutes till they are brown on both side. (Turn halfway through)

 

If the batter is too runny add a little flour – this can be eaten with tomato sauce or mayonnaise.
