Vegetable Sandwiches


Ingredients

2 Beetroots

2 tsp Mustard paste

1 bowl of Green peas

2 tsp Cream cheese

2 large Carrots

Pepper, salt, sugar

Sandwich Bread

Butter to rub


Method

Either use sliced sandwich bread or take a sandwich loaf of bread and slice them. Take off the crust right round them. Then butter your bread.

Boil beetroot and grate it, put mustard spread and mash it. Keep aside

Boil carrot or grate carrot add pepper salt and a pinch of sugar, keep aside

Put Green peas into boiling water, drain it and mash with cream cheese.

Then take a slice of buttered bread and rub the beetroot paste and cover with another slice of bread butter downwards. Then butter the top and add the green peas paste, take another slice of bread and put the buttered side down on top of the green pea paste. Then butter the top of the bread and spread the carrot mix and finally place the buttered slice of bread on the inner side.

Et - voila we have a three coloured sandwich, which we can cut four triangles from.


NB. You can use grated raw cucumber strained with pepper as alternative to green peas.
