Vegetable stuffing for -Roti/Patties/Cutlets

Ingredients

a little mustard seeds

2 large potato

2 large onion

2 green chilies

curry leaves

1/2 tsp turmeric

1 tsp curry powder

1 tsp chili powder

2 tsp chili pieces

1 tsp pepper powder

1 tsp salt

1 stalk of leeks (Optional)

Oil for tempering




Method

Boil the potato and mash, leave some potato lumps (do not over mash)

Into a fry pan, add a little oil and add mustard seeds, when splitting add chopped onion, curry leaves and green chilies. Then temper it add salt and then put the turmeric powder.

Add the potatoes, leeks cut finely and add the pepper powder and mix all together, add the chili powder and chili pieces and curry powder. Taste to see if it is to your liking. Leave aside to cool before use. Now your vegetable mix is ready for stuffing of your roti or patties.

NB: you could also add a Tinned fish of your choice to make it a fish stuffing, or add beef/chicken to this mix.
