Whole wheat flour waffles

Ingredients

2¼ cups whole wheat flour

¼ cup granulated sugar

1 tbsp baking powder

¾ tsp salt

2 cups milk

½ cup unsalted butter

3 large eggs

2 tsp vanilla extract






Method

Preheat the waffle iron. I keep it on high heat.


In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. In another bowl add in the room temperature milk, the melted butter, eggs, vanilla and whisk . Pour the milk mixture into the flour mixture and stir together just until combined.

NB: Do not use cold milk. Adding the melted butter to the cold milk will cause it to clump together. Put the 2 cups of milk in the microwave for 30 seconds if you are using straight out of the fridge.

Grease the hot waffle iron with oil/butter/cooking spray. I used a little more than 1/3 cup for each waffle. Mine is a two section waffle pan and I was able to make a total of nine waffles.

Cook until golden brown. Place on a wire rack until ready to serve so they stay crisp. This could be served warm with golden syrup/ jam/powdered sugar/Honey/fruits of your choice.


If you put it in the fridge, kindly put it in a toaster to get it crisp again.
