Wholesome Vegetable Soup


Ingredients

2 large potatoes

2 carrots

1 stalk of leeks

1 stick of celery

1/2 a celery root

1 soup cube

a few leaves of spinach

1 onion

2 pips of garlic

pepper powder

Salt to taste if not enough

1 Tbsp. of vegetable oil


Method

Wash and cut the ingredients to pieces, place in a strainer. Take a large saucepan and add the oil, when warm add the chopped vegetables and fry, than add enough water to cover and a soup cube and pepper. Once the vegetables are boiled add into the liquidizer and blend. Then keep a strainer on a big bowl and pour in the soup and then it is ready for serving. You can add any Cream/Milk if desired. I did not add any cream, it is greenish in colour because of the spinach.
