Zucchini (Courgette) Omelette


Ingredients

Courgette

1 cup Flour

3 Scallions (onion leaves)

1 tsp Paprika

Pinch Salt

Goat cheese

3 Eggs

Mint fresh

Parsley fresh

Dry mint

a little oil for frying


Method

Grate courgette in food processor, put in a paper towel to dry .

Chop finely the onion leaves, break pieces of goat cheese, beat the 3 eggs, and chop the mint and parsley


Add all in a bowl, then add the courgette. In a pan sprinkle the oil and spread, drop a spoonful of the mix and make a small omelettes turn over.
