Zucchini Cutlets (Courgette)

Ingredients

4 small zucchini

1 carrot

1 potato

salt


100 g cheese

3 pips garlic

2 Eggs

pepper/salt/chili powder

bread crumbs

olive oil


Method

Grate the Zucchini with a Julienne cutter, add salt. Next grate carrot and add salt. then Grate a potato and add salt. Mix all together and let vegetables soak for 15 minutes. Then squeeze out water. Throw juice away.



Take another bowl grate the cheese, and the garlic. Beat the eggs and then add in the squeezed vegetables. Mix together add season to your liking.



Shape into flat cutlets, coat in bread crumbs and shallow fry in a pan. You could do this without egg/flour if you wish. I only used breadcrumbs to coat the cutlets but the egg was in the vegetable mix.




Put olive oil in a flat pan and shallow fry on both sides till golden.


NB: I used half a large zucchini, 1 carrot and 1 potato, I used pepper and chili powder too. I used one egg. So use what you have at home.
