Zucchini Patti With Oats

Ingredients

1 zucchini

Salt

3-4 tbsp oatmeal/oats

100g cheese

2 eggs

Pepper

Chives







Method

Preheat your oven to 180°C.


Grate the zucchini in to julienne strips in a food processor and sprinkle it with salt. Let it sit for 10 minutes to draw out excess moisture. After 10 minutes, squeeze the grated zucchini to remove any excess liquid.


In a mixing bowl, combine the grated zucchini, oatmeal, grated cheese, eggs, pepper, and chopped chives. Mix everything well until thoroughly combined.



Form the mixture into patties and place them on a baking sheet lined with parchment paper.


Bake the patties in the preheated oven for 20 minutes. After 20 minutes, open the oven and carefully flip the patties over. Return them to the oven and bake for an additional 10 minutes, or until the patties are golden brown and cooked through.



Once baked, remove the patties from the oven and let them cool slightly before serving.



Serve the baked zucchini and cheese patties hot or cold, as a snack or side dish.

You could add your favourite herbs and spices.


Make a dip of your choice to dip into and keep it along side your dish.
