Ingredients
Either deep fried aubergine or Air fried aubergine
1 sprig curry leaves
1 inch pandan leaf
an onion
3 pips of garlic
2 green chillies
1 tsp turmeric powder
salt to taste
2 tsp roasted curry powder
1 tsp sugar
1 1/2 tsp Vinegar
1 Tbsp oil
if you like to you could add 1 tsp chili powder
1/2 cup thick coconut milk
1/4 cup water
Method
In a saucepan heat a little oil and add in the curry leaves and pandan leaves cut fine and fry for a bit then add in the thinly chopped onions, crushed garlic and slit the green chilies into two. Then add in the turmeric, roasted curry powder, sugar and salt and vinegar and saute
for a few seconds to mix together. then add in the fried aubergine and mix nicely so that the aubergine is all coated with the ingredients. Lastly add in the water and coconut milk and let simmer.
NB: If you want more gravy increase the water and coconut milk.
