Berry Tiramisu

Ingredients

200 g Lady Fingers Biscuits (sponge fingers)

400g (total) of strawberries, raspberries, blueberries or any fruit of your choice

half a lemon

250g Mascarpone cheese

300g cottage cheese

200 g Whipping cream

2 Tbsp of sugar

Juice or Syrup or coulis


Method

Wash and drain your fruits, chop them up if using mangoes. Squeeze a little lemon juice on top of fruits.



Take a pyrex/rectangular dish or a baking dish. Layout the lady fingers and pour a little strawberry, blackberry or any cordial that you have at home. I also used a little Raspberry puree or coulis to soak the fingers (not too much). Make your own at home. Raspberry coulis



Then you take a bowl add in the mascarpone cheese, cottage cheese and whipping cream, sugar and give a slight whisk either with a whisk or electric hand blender. Taste it to see if there is sweet enough. Add some more if not.



Spread your fruits of any kind on top of the lady fingers and then top it up with cream, then add another layer of fingers and repeat the process. Place in fridge to set - at least for four hours.


et Voila - Love in every bite!!


you can add half tin condensed milk if you wish instead of the sugar.


You can avoid the cottage cheese and just beat up the mascarpone and whipping cream. Or if you don't want cheese just add whipping cream!



As I said don't panic just use what you have - it all ends up in your stomach!!


Should be enough for 8 persons.
