Char Siu Chicken (like Chinese BBQ)

portions x 3 persons - increase quantity for more people

Ingredients
300 gm chicken thigh (fatty cuts preferred)
1 tbsp honey
1 tbsp light soy sauce
1 tbsp oyster sauce
1 tbsp dark soy sauce
2 tbsp brown sugar
2 cloves garlic
1 inch ginger
1 tsp Chinese Five Spice powder
Pinch of white pepper
1 tsp red food colouring (optional)
Method
Mince the garlic and ginger. In a bowl or zip lock bag add the honey, soy sauce oyster sauce and dark soya sauce. Also add in the sugar, garlic, ginger, five spice, pepper and if using the colouring. Mix till smooth to create the marinade. Add the chicken thighs to this marinade and coat the thighs very well. I used thighs and breasts.
Refrigerate this marinate for at least 2 hours or overnight for the flavours to penetrate the meat. I marinated it overnight.

Leave the chicken at room temperature for around 20 minutes
Preheat your oven to 200°C

Arrange the marinated chicken thighs on a baking tray, spreading them out in a single layer for even cooking.
Place the tray in the preheated oven and bake for approximately 20 minutes, or until the chicken is fully cooked and slightly caramelized.

Once baked, remove the tray from the oven and allow the chicken to rest for 10 minutes.
Slice the chicken and serve warm with rice/Noodles, or mixed fried Noodles -steamed vegetables like Bok choy, broccoli or peas.
