Mini Pineapple upside down dessert/cakes

Ingredients

Double quantity of condensed milk cake

(see under cake recipes)

6 pineapple rings

6 Glacé cherries

1 ½ ozs butter

2 ozs jaggery




Method

Melt the butter in a pan and then then take a cupcake baking tray and pour the butter at the bottom of the pan and sprinkle the crushed jaggery on top.


Cut the pineapple into quarters. Then add the pineapple on top and place a cherry in the centre as shown in figure 1.


Then make the cake batter and pour the cake batter over and bake in a moderate oven for approx. 20 mts. (check with pick if done)


Turn over carefully onto a dish so that the pineapple rings are seen on top.


Or

you place the pineapple in the buttered cup cake pan, then you place the cherry and then pour the batter over it. bake in an oven for 30 minutes. Turn the pan over or remove

each individual cupcake .
