Stuffed Vegetable Roti

Ingredients
2 cups flour
2 cups water
1/2 tsp salt
1 tbsp coconut oil
Method
add the flour into a bowl and add in the salt and mix. Then add the same amount of water a little at a time and beat with hand whisk so there are no lumps. Then add the coconut oil and mix till no lumps - like a pancake mix

Put oil in a 26cm pan and pour 6 tablespoon batter and nicely fill onto the pan - only put the fire at medium heat after adding the batter and after you have filled it fully round the pan.
NB: It is better to pour the batter into a dish and take a big ladle and put into the fry pan and flatter it out in the pan. NB: Make the batter thin, so it is easier to fold. Burn both sides till a few dots of brown appear.
Once slightly brown in colour turn over and fry the other side too.
(If there are still a few lumps of flour please strain it)
Then put it on a plate and lightly brush with coconut oil before placing the other one on top (to prevent sticking).

Now place two spoons of the ready made vegetable mix in the centre and fold all sides over the mix to make a square. After preparing all add coconut oil in large pan and and fry on all sides. I rubbed oil on a grill plate and closed the lid instead of frying.
