Grilled Salmon

Ingredients

4 Salmon fillets, skin on/off


for the marinade

1 tsp lemon zest off 1 lemon

1 tbsp lemon juice

2 tbsp extra virgin olive oil

1 tsp dijon mustard

2 garlic cloves, grated

1/2 tsp cooking salt

1/4 tsp black pepper

a few slices of lemon cut into half



Method

Set the oven Grill to 280°C. Wash your Salmon fillets very carefully. Add all the marinade ingredients together and nicely slather over the fillets and on the sides too. Place on an oven tray covered with aluminium foil or in a Pyrex dish, place the slices of lemon in between the slices and grill for around 11 minutes.

Lightly test with a fork to see if flaky.



This could be eaten with baked Cauliflower, grilled Peppers or oven roasted Asparagus
