Pizza Sauce


Makes 3 bottles of sauce


Ingredients

1 Onion

1 pip garlic

1 tbsp oil

2 strands of Rosemary

1 tsp tomato concentred (Puree) - (bottle or tube)

1 box of tomatoes crushed (pieces) (around 800 g)

3/4 tsp salt

1/4 tsp sugar

a sprinkle of pepper powder


3 bottles washed and sterilized.


Method

Peel the onion and garlic. Chop finely. heat the spoon of oil in a pan and add the onion and garlic and the 2 strands of Rosemary. Add the concentrated tomato and stir.

Then add the crushed tomato and bring to a boil stirring frequently. Add salt, sugar and pepper powder. reduce the fire and simmer covered for 1 hour. stir from time to time. Take lid off and keep cooking for around 30 min. Take out the Rosemary.




Pour hot sauce into the sterilized bottles, close and keep to cool on a stainless steel surface. This can be kept for around 2 months in the fridge but use rapidly.


This can be used on the Basic Pizza dough or on How to Pizza
